While the Super Bowl teams are headed for the end zone, make sure to keep your guests out of the danger zone. The danger zone is a temperature range that allows bacteria to multiply.
Health experts say avoid serving super bowl favorites such as pizza and chicken wings at room temperature for the entire game. If you're serving warm takeout foods immediately, keep them at 140 degrees or above by using preheated warming trays or slow cookers.
If you're not going to serve them immediate, then keep them in a preheated oven. You can also divide the food into smaller portions and refrigerate the containers then at serving time, reheat the items to 165 degrees.
Cold foods should be kept at 40 degrees or below, so put your serving dishes in bowls of ice.
There's a whole section on chicken wing preparation...one key, don't wash the chicken because it doesn't destroy any bacteria and could increase the risk of contaminating other foods, and serve at 165 degrees.
